In the course of day-to-day life, my honest-to-goodness plan is to prepare healthy, nutritious meals that nourish and satisfy my family. The truth is, though, life always manages to throw us some curves in the midst of our busy lives. I’m sure, by now, you’ve realized that I haven’t been around the blog AT ALL this summer. The fabulous news is that we finally sold our house, after a year and a half of waiting, (not so patiently). The other news is that my husband’s health gave us a bit of a scare and we have a couple surgeries coming up in the near future.
Good, exciting, bad, or worrisome — it doesn’t really matter what the curves are. Curves are curves. They’re unexpected, and they immediately alter what we thought we knew the plan was. What a blessing to be working from home. What a blessing to be able to take the summer off and focus on packing, finding a new house, moving, (I’d like to say unpacking, but that’s a story for another post. 🙂 ) and focusing on getting David healthy and strong. God is always faithful to provide for our family, even when we end up on a path we didn’t expect to take.
That being said, there have been times over the last few months, where traveling back and forth to doctor appointments and packing up a home have meant that mealtime has often looked more like this familiar place, than the lovely Acapulco Steak Tacos from above. Instead of the homey glow of our dining room table, spread with a home-prepared and delicious supper, our meals, were often prepared under the glow of these familiar arches or some other fast-food business, similar to it.
Occasional breaks from our healthier routines have to be expected. Sometimes, exhaustion, being pressed for time, last minute plan changes or even the desire for a treat mean we’ll be headed for the drive-up window. If we’re wise to keep those occasions in a healthy balance with our more nutritious and economical, home-cooked meals, I’m all for it. The problem for us, is that this has been an entire season of stress and exhaustion and way too many drive-thru runs.
