Alea teaches six different methods for cooking chicken! You’ll have step-by-step instruction for prepping it in a slow cooker, in the broiler, for roasting it whole, cooking it in a skillet on the stovetop, or in a pressure cooker and even for cooking moist, baked chicken in the oven. We use boneless, skinless chicken breasts, most often, so I tried out her skillet method. Perfection! The meat was juicy inside and beautifully carmelized on the outside. How I Cooked It: It was as simple as cutting the chicken into strips or cubes, adding a Tablespoon of olive oil to my cast iron skillet and heating it over medium-high heat. When the oil was hot, I added the chicken pieces to the skillet in a single layer and browned them on all sides. Then I lowered the heat and finished cooking them for 4-5 minutes. I repeated the process a couple of times and made quick work of 7 lbs of chicken — enough for multiple meals! It was perfect in my recipes for Mexican Chicken Stuffed Shells and Simple Chicken Teriyaki, not to mention a recipe from Prep-Ahead Meals, Caprese Chicken Quesadillas.
