It’s only been over the last few years that I have learned to cook pork so that it is flavorful and juicy. On it’s own, pork doesn’t have a strong flavor, so the way you prepare it, with rubs, marinades and/or sauces can have a huge impact on how it tastes. It’s also very easy to overcook and dry it out, so having several recipes that are fabulous, in my meal rotation is important. I LOVE prepping pork tenderloins for the freezer and then being able to pull one out, add it to the Crock-Pot and have moist tender pork ready by suppertime. Another favorite is cooking pork chops on the grill and I have mastered that technique fairly well. My goal over the next couple of weeks is to get the same moist delicious chops as my Grilled Pork Chops, but to accomplish it inside, now that cold weather will prevent us from grilling.
Red Currant Chipotle Pork Chops are on my #PorkBucket List. Be watching for the recipe!
