I love this Gluten-Free Blue Corn, Brown Rice and Oat Flour Blend Recipe for making muffins and quick breads, corn bread, waffles or pancakes. You could definitely substitute yellow corn flour, in place of the blue. I used blue popcorn to mill the flour in this recipe.
