Well, remember on Monday, when I was looking for salmon recipes? I finally got around to making salmon, tonight (Thursday). With all the house selling – house buying hooha that’s been going on, I haven’t had much time for thawing meat and preparing nutritious homecooked meals. I usually think to get something out of the freezer just as someone is asking, “So, what’s for supper?” – lol
Tonight, I managed to actually be at home and have the meat thawed in time to cook a decent meal. I know we’ve discussed before that we are not a “fishy” family. It’s one of those things everyone will eat, if they have to, but no one is jumping up and down about it. So, when I pulled the salmon fillets out of the freezer, I wanted to be sure I could find a tasty way to camoflauge prepare them.
I turned to my old, faithful, internet friend, Recipezaar, (which incidently, has a brand new name (Food.com) and layout). One of the reasons I love their site so much is that I type in a word – say “salmon” – and they spit out a list of 4,987 ½ recipes for that food. Now, normally that would be a daunting and overwhelming number, but in this case, not so much. They have a sorting feature that really helps me narrow down what I want. Who is better at knowing the best recipes to try, than people like us, who are in their kitchens trying them out? Well, Recipezaar (Food.com) lets people rate and review the recipes after they have prepared them AND you can sort the recipes from your search in order of most popular to least. Of course, I want the most popular! But popular is subjective, right? Well, normally I would say, “Yes, I agree with you.”; but in this case, Recipezaar doesn’t rank recipes just by how many stars they have (1-5). They also rank by how MANY 1-5 star ratings a recipe has. Now a recipe that is ranked 5 stars, but has only been reviewed twice MAY be awesome, or it may be the submitter’s mom and second cousin, Lou, just trying to boost her confidence.
So, I sort the list by ranking and when a recipe has over 150 5-star ratings, I pay attention. The recipe I am going to share with you, falls into that category. I didn’t change much, except for “doubling”, because I had two pounds of fish. The link to the original is here. Here’s the way I actually prepared it.

Reviews suggest that lowfat varieties of the ingredients work, too, if you prefer them.
Preheat oven to 450 degrees.

Salmon
Cut fillets into serving size pieces. Place in a greased baking dish. Season with salt and pepper.

The makin' o' the sauce.
Combine sour cream, mustard, onion, dill, and mayonnaise.

Salmon fillets covered with sauce.
Spread mixture over fish.

Baked fillets sprinkled with Italian cheese and paprika.
Bake 12-15 minutes. When just done, sprinkle with the Italian cheese and a dash of paprika.

Nicely browned under the broiler for one minute.
Broil 1 minute or until the cheese is bubbly and flecked with brown.

Ultimate Baked Salmon, Brown Rice and Steamed Broccoli
No one was more surprised than me, to find this was actually very good. I will probably never be a big fan of salmon, (something about the texture), but what I do know is I could eat this sauce right out of the bowl with the spoon, (no one actually SAW me do that
). I will definitely try the recipe again with a white fish like tilapia, flounder or cod, since I prefer those to salmon. I would also use this sauce on other things, maybe a dip for veggies or even as a sandwich spread. Truly delicious!
David, on the other hand, was thrilled! He likes fish and would love for me to fix it more often. This particular recipe got 14 thumbs up from him and the leftovers were very carefully packaged to be ready to take in his lunch in the morning. The kids probably lean a little more towards white fish, like me, but all of them did eat it and all commented that they liked the sauce. This recipe is a winner! I will definitely make it, again, with a different type of fish. And if your family loves salmon, it may turn out to be one of your all-time favorite dishes!
