I had quite a bit of shopping to do, so I sat down and made a quick list, adding this new bread to it. I was anxious to not only see how it would look, but to taste it and see if they really could achieve that homemade flavor in just a handful of minutes in my oven. I wasn’t 100% sure where I would find it in our store. The bread aisle seemed like a logical choice, and yet, I swung by the bakery/deli department first and was happy to find the bread, right away. Next to our deli counter, there are wooden “islands” of baked goods. On the bottom shelf of the island closest to the deli, I found FOUR different varieties of the new Ecce Panis bread. Not wanting to play favorites, and seeing that they were all around $1.88 a loaf, I threw all four into the cart and headed off to get the rest of my groceries. After our experience with it, which I will relate, below, I heartily encourage you to find Ecce Panis breads in your local WalMart, for your own family!

My challenge, with this mission, was to create a delicious spread recipe to use on Ecce Panis breads, so I added several other things to my list as an idea for the spread started swirling in my head — cream cheese, (of course
), green onions, bell peppers in red, yellow and orange, bacon, cheddar cheese… This definitely seemed to be going in a savory direction and I was envisioning something like the wrap filling I had come up with for our daughter’s graduation party that incorporated cream cheese, my homemade hot pepper jelly, lots of veggies and fresh herbs, cheddar cheese and diced chicken breast. It was really tasty and with some simple modifications, I thought I could transform it into a delicious spread. Ideas were churning as I continued through the grocery aisles. Thank heavens I had taken a list, or I would have had one of everything in the store! As it was, I did succumb to the beautiful selection of fresh berries on display and made it home with a pint of gorgeous blackberries. The Ecce Panis lived up to it’s “freshly baked bread in minutes” label. It is truly delicious; and warm from the oven, you would be hard pressed to know it wasn’t white bread baked in your own kitchen. Our family ate each variety with pleasure and gusto – no shrinking violets in our house, when it comes to homemade bread! We had the french baguettes, sliced on the diagonal for crostinis and the french dinner rolls made great sandwiches for a quick chicken salad lunch. I used the ciabatta and Neo-Tuscan Mini Boule to serve the fabulous Blackberry Cream Cheese Spread that I’m about to share with you.
Okay, so I drove home from WalMart, unpacked my groceries and quickly started my recipe idea’s transition from wrap filling to spread. Epic fail! -lol- It actually tasted great and my son probably ate 2/3 of it in the first hour or so, but it was not as “pretty” as I pictured it and I wanted this to be really special, so….rewind! What else did I have on hand that would make a delicious spread and look as beautiful as it tasted? I’m starting to think that deviation from my grocery list was God-inspired.
Blackberries! Well, to say it was a success to change courses, would be an understatement. We loved the color, the flavor and the texture of this delicious spread. It’s only five ingredients and we will make this over and over again, easily substituting whatever fresh berries are in season. Your family will think you’re amazing!
This will be one of your most requested recipes, whether you are serving it with appetizers at a party or on bagels for breakfast or as a simple snack at home! Other berries could easily be substituted. It can be whipped up in minutes and will satisfy all comers with it's lightly sweet, fresh flavor.

No, actually, believe it or not I have still been cooking up a storm, all this time. (My people like to eat.) There have just been so many amazing projects and giveaways to share with you lately, that between completing them and writing about them, and once in awhile homeschooling and doing a load of laundry or going way out on a limb and getting in 2 or 3 hours of sleep, the recipes just haven’t been getting posted. So, get ready. There will probably be a whole slew of them coming at once! -lol- It’s feast or famine around here, Baby. Tonight though, we’re going to feast. And this dish will be a keeper. You may actually want to pull it together for your family dinner on Sunday. They’ll love it!

Fiesta Bake! I created the filling in a skillet in the center of my kitchen counter, using the NuWave Precision Induction Cooktop!
I was wandering through the boards on Pinterest, last week, and I found a pin that looked wonderful and it led me to Let’s Dish and the recipe for Cheesy Enchilada Casserole. Danelle’s site is gorgeous. Her food photography skills are over the top. I could have spent hours just looking at all her pictures, except for the fact that I was now determined to make that recipe — sort of. You already know this story. Some of the ingredients, I didn’t have. Some of them, my family didn’t care for. And I had an idea or two to make this gorgeous dish with our own family flair. So, here is our interpretation with many thanks to Danelle, for inspiring us to add what is a new family favorite to our meal rotation. (On a side note, I think this dish would freeze amazingly well, too.)
As it turns out, the timing to give this a shot was perfect! I had just received a NuWave Precision Induction Cooktop, from Hearthware, to review; and so I was able to prepare the filling for this yummy dish, right in the middle of my kitchen counter! (You’ll see why that’s a big deal, in just a minute.) Those of you who’ve been around Busy-at-Home for awhile, no that I cook on a Samsung Induction Range. I absolutely adore induction cooking and would be hard-pressed to ever go back.

This is NOT your grandma's hot plate! It's a gorgeous 12" extension of your range! It cooks using induction heat and it's fully portable. The digital display and controls are simple to operate and I was cooking in just minutes after unpacking the box. I love that it comes with a nice little recipe book, too. It would be hard to go back to conventional cooking after using induction for the last several years. Adding the NuWave PIC to my kitchen equipment, has me even more convinced of that.
To pare things down to the bare facts for you, induction cooking uses an electromagnet to generate heat in the cooking vessel, not in the cooktop, itself. Under the glass of the cooktop there is a copper coil, that produces a gentle electromagnetic field when electricity passes through it. This starts the molecules of your pan vibrating, which creates heat. The pan is heating up, not the cooktop. Totally cool, right? Your cookware needs to be stainless steel or cast iron (magnetic) in order for the range to work. I can boil a saucepot of water in about 90 seconds on my stovetop. The glass top doesn’t heat up (though it DOES get warm under the pot, where heat from the pot is transferred to the cook top), because all the energy goes directly into the cookware. It’s a much more even and consistent way of cooking and I don’t have any of the issues that come with typical glass top stoves. For instance, spills don’t bake on. Sprinkling sugar onto most hot glass-tops, results in a lifelong, baked on crunch or even small pits burned in. Induction cooktops don’t have enough heat to melt the sugar, mush less burn it on. Love, love, love that! My grandbabies have stood on their tippy-toes and reached over the top edge of the stove and unless they directly touched the pot, I didn’t have to worry about a burn. The moment that truly sold me was a demonstration where a skillet had been cut in half and then placed on the range. The rep cracked an egg, half onto the skillet, and half onto the “burner” of the cooktop. In a mere moment, the side of the egg sitting in the skillet was cooked through, while the half sitting on the burner was as raw as the moment he had placed it there. Amazing! Okay, so enough with my love fest for my induction range. Now that you get how amazing it is and how it works, I want to tell you that there is one thing about it that annoys me profusely. It only has one large burner. The other three are terribly small. In this family, that’s a problem. We don’t cook small. Hmmph! A bothersome raincloud on my kitchen parade.
I’ve also told you, many times, that I am amazed at the way that God provides; and how I never cease to be delighted at the way He takes interest in and cares about even the small, everyday things in our lives. In a strange twist of events, He provided me with a “big burner” through my association with Hearthware, the company that brought us that fabulous NuWave oven! The NuWave PIC (Precision Induction Cooktop) is one of their new products and what a blessing! I was fortunate enough to be asked to test it out and share my thoughts with you. A girl never gets tired of “having her dreams come true”.
This was over-the-top perfect! I am officially in “big burner” heaven! – lol

Needless to say, I’m as thrilled with the NuWave Precision Induction Cooktop as I was with the NuWave Oven. You can bank on the fact that I am officially a hardcore Hearthware products fan and baby this is a TWO big-burner kitchen, now!

The NuWave PIC is a perfect option for potlucks, big dinners where you need an extra burner, a way to keep your delish fondue warm and beautiful or a myriad of other uses. If there is an electrical outlet, you can use it there! There's no open flame, not hot burner ring, and when you remove the pan, the burner shuts off! This eliminates the worry of fire hazards associated with other portable cooktops. Go check it out and invest in your own little "kitchen expansion"! You'll be glad you did!

The results of this delicious discovery were two-fold. First of all, I realized that for less than ten dollars, I had prepared a main dish worthy of a company dinner, meaning this could be used to frugally prepare a wonderful dinner party and it was done in only TWENTY THREE MINUTES! Amazing! Honestly, the chicken breasts I cooked were so huge, that had I planned on serving them as an entree, I would likely have cut most of them in half, making 12-14 servings for under $10! I love that! Secondly, I was so impressed with the way this chicken turned out, I went immediately to the grocery store and picked up a bird to try something I have never done before — roasting a whole chicken. Let’s just say, “I’m fabulous!”

Every once in awhile, something happens that reveals a secret prejudice of mine – one I don’t even realize I have until it just !POPS! out. Upon deeper reflection, I have discovered myself to be an infomercial bigot. I know, it’s hard to believe, but I actually harbor the sentiment that the majority of televised infomercials are fronts for some sort of scam. I suppose there are support groups or therapies that can help me with this “wrong thinking”, but in the meantime, I feel so much better just admitting it to you. Thanks for listening! -lol- All joking aside, I do have a slight aversion to most infomercials.

I received the black and silver NuWave Oven with an Extender Ring kit and frozen pizza accessories, for this review. After using it for so many different dishes and recipes, I'm ready to say that the NuWave Oven is my new kitchen essential! Who knew?
So, when David called me into the living room, saying, “You’ve got to see this!”, I did that barely detectable eye-roll thing and humored him by standing there for a minute or two. In my defense, there have been a couple of other “infomercial must-haves” that I relented on and will remain eternally embarrassed about. Really? A carpet cleaning machine strong enough to suck up a bowling ball? How did I get talked into that one? lol The difference with this particular infomercial was that David wasn’t giving up on it. Every couple of months, I would be summoned, once again, to observe the televised demonstration. I was actually pretty amused that he was so intensely interested in this product – a countertop oven that cooks with something called Triple Combo Cooking Power – a NuWave oven. Once I accepted that he was not going to forget about this marvel of cooking technology, I decided to do a little online research.

The black and silver NuWave oven included the following components. I love that everything, except the power head, is dishwasher safe! This was so simple to assemble and use, plus, clean-up is a cinch.
Triple Combo Cooking Power combines conduction heating (like your oven at home), convection heating (utilizes a fan to circulate heated air evenly around the food being cooked) and infrared heating (heat from the source directly to the food, cooking it from the inside and outside at the same time). I read that with the NuWave oven, all three are used in a perfect balance to achieve delicious, healthy meals in a fraction of the usual time. That all sounded great, but I really didn’t understand infrared heat. I wanted to know more.
I learned that in infrared cooking, the heat is transferred directly to the food from the heat source, rather than heating air and the vessel the food is in and then waiting for the heat from those to transfer heat to the food. Unlike convection and conduction methods of cooking, infrared cooking doesn’t usually heat up the air where it’s being used or require a conductor, like pots and pans, oil, water, etc. to effect a transfer of heat. The energy that directly strikes the food molecules causes a rise in temperature of the food and cooks it. This allows for faster and more even cooking, plus, there is much less risk of drying out your food. Juicy, tender and flavorful are the norm with infrared cooking. Resolving another of my concerns, I discovered that it’s also completely safe. Infrared cooking is commonly used in restaurant cooking and a typical feature of most modern grills. As a matter of fact, infrared radiation occurs in about 80% of natural sunlight.

The Extender Ring Kit contains an Extender Ring that allows you to increase the size of your NuWave oven to accomodate up to a 16 lb turkey, a standing rib roast, or a gigantic (up to 14 lb) ham! It also includes a 10", non-stick baking pan and a 2" baking rack. I've put them all to good use already. Can't wait to share all the tasty recipes with you, that we've been trying out!
Okay, it’s safe. It’s efficient; AND my favorite guy REALLY wants one. Plus, to top it off, I found this adorable video on YouTube. “Mmmm…delicious!” -lol- You have to watch it, and then, you’ll understand.
Anyway, I was convinced, and decided to check into testing a NuWave oven in our own kitchen. Thanks to the NuWave manufacturer, Hearthware, Inc., I have owned a NuWave Oven Pro for about a week, now; and as much as I hate to admit it, David was totally right. (If you tell him I said that, I will disavow any knowledge of you, this blog and that statement
) So, it seems, not ALL infomercials are scams. It’s ok. I’m getting help.

I received everything in this Pizza Accessory Kit, except the bamboo cutting board. My set included a silicone pizza pan, a stainless steel"flipper" tool and a really cool stainless steel pizza cutter/server combo tool.
What are some of the features that I LOVE about my NuWave oven?

Was there anything I didn’t care for? Well, if I was getting nit-picky; it IS large, taking up about a 16″ diameter footprint on my countertop. You know how I am about “stuff” on my counters. The NuWave is something I will use so regularly, however, that I am willing to sacrifice the space, in order to keep it out and handy. The other thing is that I need to buy a meat thermometer. (Okay, I should really already have one, but I don’t, so I gotta.) As with any oven, the cooking times on some recipes seem to vary +/- 5 to 10 minutes, at times. Having a meat thermometer would be a good assurance that my meat actually is cooked through. I’m not used to meat cooked well and still being juicy. It throws me a little, but in a good way.
Okay, if I go on with recipes, this post is going to be 14,687 miles long, and I know you want to get to the giveaway, SO…I’m going to make this post just about the review and giveaway and then publish the recipes as separate posts. I’m not above teasing you with a few pictures of delectableness, in the meantime, though!
I’ve been busy and these aren’t even ALL that I have cooked in the NuWave.

I baked this 3 1/2 lb meatloaf to serve 10 hungry family members. It was moist, delicious and baked in only one hour! Do you think a 3 1/2 lb meatloaf would bake in your conventional oven in just one hour? What if you were also roasting potatoes and carrots alongside it? That's exactly what I did! -- an entire meal, cooked in one place without heating my kitchen, dirtying extra dishes (everything cooked directly on the racks), timed so everything was done at one time AND done in only one hour.

Home fries (roasted potatoes) and carrots cooked to delicious perfection in our NuWave oven.

One-yard pieces of 45" fabric, some thread, straight pins, scissors and your sewing machine are the main necessities for this simple project.
Guess what? You can create some inexpensive, and yet very personalized gifts, for Christmas. Yes, you can! It’s super simple. Think positive!
I just made three adorable pillowcases for our grandkids, in a little over an hour, and THAT included stopping to take pictures and to start some rye bread rising! Here’s all you’ll need to get started on your DIY pillowcase project:
Fold the yard of fabric in half, right-sides-together, so that it will measure about 22″ x 36″. Pin the long edge and the short edge that will be the bottom of your pillowcase, to hold them in place while you are stitching.

Right-sides-together means your fabric will be folded inside out. Pin the long edge and one short edge. The short edge will be the bottom of your pillowcase.
Start sewing the 5/8″ seam at the folded corner on the bottom edge of your pillowcase. Be sure to back-stitch to lock your stitches in place.

Run the pinned edge of your fabric along the 5/8" guide on your sewing machine to create the seam, being sure to back-stitch to lock your seam .
When you are 5/8″ from the long edge of your fabric, leave the needle of your machine down in the fabric, lift the presser foot and pivot the fabric, so that the unstitched edge is now ready to be stitched on your machine at the 5/8″ guide mark. This will create a perfectly sharp corner.

Pivoting the fabric so I can stitch down the long edge and create a sharp corner. Note that the sewing machine needle is down, holding the fabric in place, while the presser foot is up.
Now stitch the long edge of your pillowcase and back stitch to lock the seam when you reach the end.

Backstitch to lock your seam and keep your stitching from unraveling.
If you have a serger or a newer machine than mine, finish your edges in the way that works best for you, but I zigzag my seams to help keep them from raveling when the pillowcase is laundered. Run the presser foot along the stitching in the seam you just made, to zigzag the edge of the seam.

Trim the seam, as close as possible to the zig-zag stitches, without cutting the stitches. Trimming the seam removes extra bulk and gives a nice finished edge. If you have a pair of pinking shears, even better. Mine are so dull they wouldn’t cut hot butter. Definitely time for a new pair!

Using a steam iron, press under 1/2″ on the unfinished top edge of the pillowcase. Turn the fabric toward the inside of the pillowcase. Press the 1/2″ hem around the full-circumference of the pillowcase top.

Press 1/2" hem toward the inside of the case at top edge of pillowcase.
The 1/2″ inch you already pressed under has created a nice clean edge at the top of your case. Now, you need to fold it over one more time to create the final finished 3″ hem. Press the hem in all the way around the top of the case using a steam iron.

Fold over three inches to create the finished hem and press it in with a steam iron.
Now, line the edge of your presser foot up with the folded under edge of the hem you created and stitch around the circumference. Be sure to overstitch the seam when you get to the end or back-stitch to lock the seam.

Turn your finished pillowcase, right-side-out and press out any wrinkles. You’re finished! It’s that simple!

I finished these three in about an hour. They were simple and inexpensive, but I know my grandkids will be thrilled with them!
