Moist, cinnamony, cream cheese goodness! What's not to love?

I pinned (remember pinning?) this recipe for Cinnamon Roll Cake, from the Cookin’ Up North blog, almost a week ago and have been waiting for the perfect opportunity to make it. I woke up on Monday and I just wanted some, which seemed like a compelling enough reason to give it a go! – lol – Plus, a dear friend was having a birthday, so I could share half with her. Woohoo! Birthdays are GOOD! The original recipe is made in a 9×13 pan. I used two 8×8′s. The only other thing I changed up was that I made cream cheese icing for the top, instead of a powdered sugar drizzle. Yum! Also, this was good when it came out of the oven, but I wasn’t over-the-top thrilled about it. When the kids pulled icy cold pieces out of the fridge, later that afternoon, and started raving and exclaiming over how good it was, I was amazed. Cold, this moist, delicious cake had been completely permeated with the cinnamon flavor and the cream cheese icing was creamy, flavor heaven! The flavors were magnified and intensified by the cold. I definitely recommend chilling this marvelous treat before serving. Oh, and as a matter of personal preference, I will double the cinnamon, next time I make this. That’s just the way I roll.

These are the ingredients you will need to gather to make the Cinnamon Roll Cake batter and filling.
(adapted slightly from Cookin' Up North blog) I doubled the cinnamon and made cream cheese icing, instead of a powdered sugar drizzle. My family loved this moist, yummy cake best, after it had been refrigerated for at least a couple of hours.
Ingredients
Cake:
- 3 cups KAF Unbleached All Purpose Flour
- 1/4 teaspoon.salt
- 1 cup sugar
- 4 teaspoons baking powder
- 1 1/2 cups milk
- 2 eggs, slightly beaten
- 2 teaspoons Nielsen-Massey Madagascar Bourbon Vanilla
- 1/2 c. butter, melted
Streusel Filling:
- 1 cup butter, softened
- 1 cup brown sugar
- 2 Tablespoons KAF Unbleached All Purpose Flour
- 1 Tablespoon KAF Vietnamese cinnamon
Cream Cheese Icing:
- 8 oz block cream cheese, softened
- 3 cups powdered sugar
- 1 teaspoon Nielsen-Massey Madagascar Bourbon Vanilla
- 1/4 - 1/3 cup milk
Instructions
To Make the Cake Batter:

- Mix dry ingredients and make a well in the center.

- Add slightly beaten eggs, milk and vanilla to the dry ingredients, mixing until combined.

- Add melted butter and stir until thoroughly mixed.

- Pour cake batter into a greased 9x13 or two 8x8 pans.
To Make the Streusel Filling

- Mix all ingredients until completely combined. My butter ended up being more melted, than soft, so rather than a crumbly mixture, mine was more paste-like. That actually worked out okay for me, since I think it makes it easier to swirl it through the batter.
- Spoon filling evenly over the top of your prepared cake batter.

- Use a table knife to gently swirl the filling through the batter.
- Bake at 350 degrees for 28-32 minutes.
For the Cream Cheese Icing:
- Blend cream cheese, powdered sugar and vanilla with your mixer.
- Add enough milk to achieve the consistency, your family likes best (I used about 1/4 cup). Blend until smooth.

- Spread icing over cooled cake. Cut and enjoy. (The flavor of this cake is greatly enhanced by cooling and refrigerating for a few hours.)

I love, love, love KAF!! My “secret ingredient” in the kitchen is vanilla sugar. I always throw old vanilla beans in with sugar and let the flavors come together. It adds such a great flavor to anything and is a great way to not let anything go to waste.
My “secret” ingredient(s) when cooking are fresh garlic and masala (indian spice). It makes the food really flavorful. For baking treats, we add a bit of vanilla and almonds. Thanks!

I have two super-secret ingredients that I use in almost everything: very mild red wine vinegar and cayanne pepper. I especially like to use a tiny dash of cayanne in chocolate anything. No one can figure out what it is that makes it especially delish.

My favorite secret ingredient? hmm…I don’t know. It just may be that I substitute when I need to! LOL
Seriously, one of the things I do is to try to sneak in fiber and grains. Sometimes I use oatmeal for part of the flour; and, I’ll grate carrots and add to sauces, so my kids don’t complain about veggies.
Not much of a secret, I know. Sorry. I tend to follow recipes; and, I guess my biggest secret is that I rely on my resources

My secret ingredient is coffee. I add it to recipes that include chocolate for a richer flavor.
My secret ingredient is pure vanilla – straight from Mexico (I always double the vanilla that’s called for in a recipe!)
My secret ingredient(s) for my sweets are extracts! My hubby’s favorite food is a nice stack of pancakes. Changing up the flavors make for a very fun and interesting meal. He will tell me if he has a craving for a particular craving, but usually it’s kind of a fun surprise for him–he usually starts guessing as soon as he can smell the pancake cooking. Some of his favorite flavors have been: lemon (lemon, lemon poppy seed), maple (maple cinnamon, maple pecan), and vanilla (vanilla cinnamon, vanilla maple, eggnog).

if i am baking my secret ingredient is a couple of things, for chocolate cake it is cinnamon and sea salt and a couple tablespoons of mayo. for cookies it is real vanilla and real butter and a dash of allspice. if i am cooking it is paprika and italian seasoning of my own mixture.

mayo- it makes the moistest chocolate cake!
I put honey in anything I am making that is supposed to have some sweetness since I always have it on hand. Garlic clove is a good one for non-sweet food items. But the best of all is lemon zest because I can put that ingredient in anything.

I don’t really have a “secret” ingredient. But I do use a lot of garlic powder.
When baking, I love cinnamon. Cooking, I find that cayenne pepper kicks any dish into spicy overdrive.
My favorite secret kitchen ingredient is dried minced onion. I have family members who hate onions but so many recipes are lacking without them. If I put minced onion into a soup, stew or other things, they almost cook away leaving no evidence but plenty of flavor.

My secret ingredient is parsnips- shredded: They add a snappy flavor to hashbrowns or roast Beef or Corned Beef hash.
I also used shredded parsnip to tone down the sweetness of Corn chowder or cream of broccoli bisque.

My favorite secret ingredient is aged Balsamic Vinegar. It adds a nice a nice acid to many recipes, and adds a yummy nutty type flavor that is impossible to identify but always gets the wow that is good comment. A little dab will do

Greek yogurt – it is such a versatile dairy! IT can be used in place of sour cream or sweetened and used in baking.

My fave secret ingredient is EZSweetz…which is liquid sucralose (liquid splenda). I try to be as sugar free as possible (diabetes runs in the fam), so it’s a must.
I use a lot of Old Bay in my recipes.
Well, as a mom of young children, my secret ingredient is ground flaxseed. It adds a little bit of flavor but I use it more as my secret weapon to get more healthy stuff in to them!! I always add it to breads, pancakes, muffins and other baked goods.

In cookies I like to add lemon juice, otherwise I really like my Mexican vanilla.
My secret ingredient for most things is substituting garlic salt for regular salt! It makes everything so delicious!
Pepper or Mrs. DAsh- i use both on everything to add flavor
