    I got this recipe out of a magazine while sitting in the waiting room at the eye doctor. The creator of this delicious recipe is none other than The Pioneer Woman!

    Chicken Spaghetti

    Ingredients

    * 2 cups Cooked Chicken
    * 3 cups Dry Spaghetti, Broken Into Two Inch Pieces
    * 2 cans Cream Of Mushroom Soup (I used 1 Chicken and 1 Mushroom)
    * 2 cups Grated Sharp Cheddar Cheese
    * Œ cups Finely Diced Green Pepper
    * Œ cups Finely Diced Onion
    * 1 jar (4 Ounce) Diced Pimentos, Drained
    * 2 cups Reserved Chicken Broth From Pot
    * 1 teaspoon Lawry’s Seasoned Salt
    * ⅛ teaspoons (to 1/4 Teaspoon) Cayenne Pepper
    * Salt And Pepper, to taste
    * 1 cup Additional Grated Sharp Cheddar Cheese

    Preparation Instructions

    Cook 1 cut up fryer (I used boneless chicken breasts) and pick out the meat to make two cups. Cook spaghetti in same chicken broth until al dente. Do not overcook. When spaghetti is cooked, combine with remaining ingredients except additional 1 cup sharp cheddar.

    Place mixture in casserole pan and top with remaining sharp cheddar. Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately: 350 degrees for 45 minutes until bubbly. (If the cheese on top starts to get too cooked, cover with foil).

  9. Love this easy, cheap and good recipe given to me by my friend:
    Taco Style Rice and Lentils
    of course healthy/meatless.*
    3/4 c. dry lentils
    3/4 c. brown rice
    4 c. water
    4 beef bouillon cubes (Okay, I did not do this–I did 4 c. of homemade chicken stock, actually 8 c. because I doubled the recipe)
    2 t. chili powder
    1/2 t. cumin
    1 t. onion powder
    1.4 t. garlic powder
    *I added a can of diced tomatoes
    Bring water to a boil and then add all. Bring back to a boil and then reduce heat to low and simmer with lid on for 45-50 minutes. Fill tortillas with lentil rice mixture and top with sour cream, cheese, lettuce, tomatoes, salsa, etc.

    You didn’t mention if the meal had to be dinner, but we freeze extra pancakes all the time here! My son is allergic to eggs, so buying pre-made frozen pancakes just isn’t an option (plus it’s cheaper to make your own anyway). I do a modified version of the Bisquick “melt-in-your-mouth” pancake recipe off the box, omitting the eggs but adding a little oil to compensate for the moisture loss. I also add in chocolate chips rather than using syrup and skip the added sugar. So my recipe looks more like:

    Egg-free pancakes (makes ~14 pancakes)
    2 cups Original BisquickÂź mix
    1 cup milk
    2 tablespoons lemon juice
    2 teaspoons baking powder
    2 tablespoons vegetable oil
    1/2 cup chocolate chips

    1. Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with cooking spray, vegetable oil or shortening. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)
    2. Stir all ingredients except chips until blended. Fold in chips. Pour by slightly less than 1/4 cupfuls onto hot griddle. [I use my Pampered Chef large scoop myself]
    3. Cook until edges are dry. Turn; cook until golden. To keep warm, place in single layer on cookie sheet. Cover with aluminum foil, and place in 200°F oven up to 10 minutes.

    You can either toast them in the toaster or microwave them to warm them up.

    I liked the book, “Mr. Darcy’s Diary” by Amanda Grange. I liked the Jane Austen books, so this spinoff looks like a good read.

    I grew up eating this meal, called Sauce Piquante, a creole dish that you serve over rice.

    Brown 1 lb. of floured stew meat in a little oil in a big pot. I add 1 lb. of cut up link sausage to the pot and 1 small tomato paste and 2 small tomato sauces.

    Then chop several bunches of green onions and add to the pot.

    Add several cans of water or a couple of cans beef broth to the pot, so the pot is half or a little more full. If you like spice, add some dashes of cayenne pepper and sprinkle some red pepper flakes in the pot.

    Simmer 30 minutes to a hour on medium low til the meat is tender. Usually the longer it simmers the better the taste.

    Stir ever so often, and add a little water if it starts thickening too much or sticking to the bottom of the pot. Serve over rice, and with your favorite bread. This recipe is easy to double or triple, and freezes great.

    A recipe that is easily doubled or tripled is my stuffed shells.
    1 box jumbo shells
    1 jar (15 oz ?) pasta sauce (less chunks=better)
    9 oz bag spinach
    1 container low fat ricotta (standard size, can’t remember oz)
    8 oz bag low fat 4 italian cheese blend
    Put ricotta and italian cheeses into food processor. Cook spinach in pan until wilted, add to food processor and pulse until well blended.
    Cook shells, drain and stuff with spinach and cheese mixture.
    Pour sauce over shells. Voila!
    *Sometimes I will put tofu into the cheese/spinach mixture.
    *It helps to put the spinach and cheese mixture into a quart sized ziploc bag, cut off small piece of a corner and pipe into shells. Goes much quicker!

    A recipe I can double as I cook would be our popular pork stew. It’s versatile, simple and I hardly use measurements because it changes with each time I make it. I basically cook it with whatever I have in the fridge (esp fridge clearing times) and them add basic seasonings.

    Being Chinese, this is the Chinese way I know.

    Pork belly
    Root vegs (carrot, turnip, white radish or whatever available. You can even mix and match)
    Red dates
    Wolfberries
    Garlic (lots of it!)
    Chinese mushrooms
    Hardboiled eggs
    Dark soy sauce.
    Light soy sauce
    Oyster sauce
    Salt
    Brown Sugar
    Pepper
    Five spice powder

    I usually use about 1/2lb to 1lb pork belly with a nice layer of fat to keep the thing moist. I’d recommend cooking this in a crockpot so it cooks while you sleep at night. I basically sear the meat first then add the vegs in with the dates and such to sear for a while and then put everything into the crockpot. The I season according to taste. Usually less dark soy, more light, a dash of 5 spice and pepper and salt to taste. it’s so random but it’s all about intuition, really. Then fill the pot until it just covers the ingredients. Let it go on low for 8 hrs or so. When it’s done, place everything into a pan to boil and thicken for a bit (usually takes me 20 minutes on low stove heat). Once it thickens, I’ll keep some aside to freeze for another day’s lunch or dinenr and have the rest with steaming rice for dinner that night. They keep very well and taste even better the day after!

    Here’s a recipe you could easily double or triple:

    Sweet Potato and Black Bean Chili
    1 tbsp vegetable oil
    2 medium onions, chopped
    1 tbsp chili powder
    1 tsp ground cumin
    1 cup vegetable broth
    2 medium sweet potatoes, peeled and cubed
    1 28-oz (796mL) cans diced tomatoes
    2 19-oz (540mL) cans black beans, drained and rinsed
    1/2 tsp salt
    1 tsp crumbled dried oregano

    Heat the oil in a large saucepan or Dutch oven. Add the onions and cook, stirring, over medium heat until the onions are soft – about 5 minutes. Add the chili powder and the cumin and cook for another minute or so. Add the vgetable broth and the cubed sweet potatoes, reduce the heat to low and cook, covered, until the potatoes are almost tender – about 10 minutes.

    Add the tomatoes with all the juice from the can, the beans, salt, and oregano. Bring to a boil over medium heat, then let simmer until the potatoes are completely tender – about 20 minutes.
    Serves 3-4 as a meal.

    I like to double and freeze a meal called Swiss Chicken. It’s easy, pretty much just chicken, milk, swiss cheese, and stuffing mix. It’s easy to put together and freezes well, and it’s soooo delicious too.

    I have done some meals that we love in bigger portions , cooking only one time a month from the idea of a MOPS speaker to help save money. I have found that some things dont freeze well though. But I mostly enjoy doing spinach stuffed chicken with a homemade sauce on top or three meat casseroles

    This is a variation on the cook once, eat multiple times recipes. Today I sauteed 3 packages of ground beef and added fresh onions. I could have added bell peppers and celery, but I didn’t this time. I packaged the cooked meat and onions into 2 cup size packages and popped them into my freezer. I now have the basis for: spaghetti meat sauce, soft beef tacos, sloppy joes, and beef stroganoff. All I have to do is add the sauce ,seasoning, or sour cream (depending on the recipe). This takes up less room in my freezer and is just as easy for me as fully prepared meals.

    As a history teacher the book Dancing Plague by John Waller intrigues me. I’m always on the lookout for strange stories that students will enjoy.

    The best thing to freeze is tomato soup base (make giant batches in the summer and eat all winter long)
    FRESH TOMATO SOUP (multiply by the amount of tomatoes on hand)
    2 lg. onions
    Oil or butter
    3 qt. tomatoes (this is usually around 12-15 medium tomatoes)
    2 bouillon cubes
    1/4 tsp. nutmeg
    3 tbsp. sugar
    Milk (when serving)
    Saute onions in oil in saucepan. Blanch and peel tomatoes. (Or freeze whole tomatoes and run under warm water to remove skins.) Add tomatoes and all but milk to the onions. Heat to boiling and simmer uncovered about half hour. Use blender to puree the soup. Divide into jars or bags to freeze. When ready to eat just reheat and mix 1 cup milk to every 3 cups of soup.

    I just order the first book. I am careful of the books like that I may want to try. 2 of my family are very pickey eaters- meat and potatoes only – don’t let anything touch it and don’t mix it with anything. the veggies they eat are potatoes, chips, frenchfries(yeah, i know not to healthy but what I can do with one of them ? If his mom couldn’t change I know I am not) . The other 2 will try more things. I am hoping to find a few that I can fix and be liked so I can double it and include it in my freezer more often.

    Spicy Corn & Tomato Casserole–This can be made in double batches and put in the freezer for later on.

    1 lg. onion, chopped
    2 med. green peppers, chopped
    1/2 c. butter
    1/4 c. all purpose flour
    2 c. fresh or frozen corn
    2 c. long grain cooked rice
    1 c. diced tomatoes with liquid (my family likes the kind with chiles, but if you don’t want is so spicy use the regular kind)
    4 hardcooked eggs, chopped
    2 1/2 cups shredded sharp cheese, divided
    2 T. Worcestershire sauce
    2 to 3 t. hot pepper sauce
    2 t. salt
    1 t. pepper

    In large skillet, saute onion and peppers in butter until tender. Stir in flour. Remove from heat. Add remaining ingredients except for 1/2 cup cheese. Pour into greased 2 1/2 qt. baking dish. Bake uncovered, at 350 degrees for 45 minutes. Top with remaining cheese. Let stand 5 minutes, then eat and enjoy!
