About 10 pm on Friday night, I started reading The Stocked Kitchen, by Sarah Kallio and Stacy Krastins.  By midnight, I was finished.  Seriously, I read a cookbook cover to cover and was so excited, I couldn’t go to sleep.  It seems a little silly to call this just a cookbook.  It’s more like “kitchen curriculum”.  I’ve been cooking for at least 40 years, and I would venture to say I’m fairly good at it.  Yet, I learned so much from The Stocked Kitchen that I had never previously considered.  I can’t wait to share it.  It is going to take a busy woman’s view of her kitchen, and cooking, and literally turn it upside down.  I will venture to say that you have never seen another cookbook like it and though there will probably be many who will try to copy this ingenious concept, you get to hear about the one and only original, right here, on Busy-at-Home.  (Enter to win a copy for yourself, at the end of this post!)

The first two “chapters” of the book are made up of a total of only three pages.  After reading them, however, I was hooked.  I felt a kinship with these women who knew exactly what the challenges are in a busy woman’s kitchen, day-to-day — you know, that 4:30 or 5:00 standing and staring into an open refrigerator or pantry and feeling like you have nothing to make for dinner challenge?  They’ve  been there, done that, AND they have a solution.  The difference between understanding a dilemma, and solving a dilemma, is action.  Sarah and Stacy’s actions are going to rock your cooking world!  The system and recipes they have developed are going to save you time  — they’re going to save you money — and they’re going to give you a confidence in the kitchen that will leave smiles on the faces of your family and guests at every meal.  (I’m just a little stoked about this cookbook:) )  Frugal, fast and made from scratch — everything we love at Busy-at-Home!

I have made several recipes from The Stocked Kitchen, already. One of them is their Taco Meat. It's delicious, cheaper than seasoning packets and this is definitely one I would cook in bulk and freeze in 1 lb packages. Taco meat is used as a base for several recipes, like Beef Enchiladas.

The short and sweet of the premise behind this book is one awesomely simple, yet comprehensive grocery list.  Keep your fridge, freezer and pantry stocked with these items and you will always have what you need to create ANY of the more than 300 recipes in this book.  The grocery list is included in tear-out pages in the back of this wonderful, hard cover cookbook.  Stick it to the fridge, check off items as they are used (and train others in your house to do the same), so you know it needs to be replenished and then carry the list to the store with you every 7-10 days to restock your kitchen with the few items you need.  You could easily just make copies of the page to have one for each week, or even simpler, visit The Stocked Pantry website and print the list on your printer at home.  Do you realize how this will revolutionize the way you shop — how many “extra” things you will not be buying — how much time and money that can save?  It boggles the mind.

Have I ever shown you how to roll a nice, tight burrito or enchilada? To make the beef enchiladas from The Stocked Kitchen, roll the taco meat in a flour tortilla. Fold the side edges in first.

So, what’s the secret to this grocery list?  What makes it so magical and special?  Have you ever seen a recipe online or in a magazine and thought it sounded amazing and decided to make it, only to find you needed some exotic ingredient that you have never purchased in your life, much less have sitting in your pantry?  Have you made an extra trip to the store to get that item, and a few others you find along the way, just to bring it home, make the recipe and have the rest of that product sit untouched on your shelves for months or even years?  I definitely have.  The secret to The Stocked Kitchen grocery list is that all the items are everyday, normal food that you probably keep in your kitchen most of the time.  When I first glanced at the list, I thought, “That’s a LOT of groceries!”, but after taking the time to read through it, I already had about 85-90% of those items in my kitchen.  The few things that aren’t on your normal list of staples, will quickly become familiar to you, because they are so commonly used in these recipes.  You won’t be buying exotic, but you WILL be buying cost-effective, common ingredients that can be used to create delicious, nutritious meals and that will save you money on 1) pre-packaged, processed food and 2) going out to eat at the last minute because you “don’t have anything to cook at home”.

These recipes are certainly family-friendly, but they will be equally great for entertaining.  There are options for every palate and quite a few vegetarian options, as well.  That was actually one of my biggest concerns before reading the book — “Won’t we get tired of having the same old dishes day in and day out?  How can there be enough variety, with only one shopping list?”  Let me ask you a question.  In a 30-day span, are there any of your family’s favorite dishes that you prepare more than once?  We sure do and sometimes it’s because we want it, sometimes it’s because I can’t think of anything else to make.  The Stocked Kitchen has enough soup, pasta, and meat main dish recipes that you would be able to eat a different dinner (no repeats) every night for more than two months.  I know, because I counted.  :)   Our family is not huge on seafood, (though I may try incorporating it more often with these recipes), so I counted how many meals I would be able to make if I never used ANY of the seafood recipes.  There were over two months worth and that doesn’t count the times we will eat breakfast for supper or have a baked potato bar, etc.  This grocery list doesn’t limit you, it uses ingredients you typically keep on hand, anyway, and provides you with the recipes to help you create a delicious, expanded repertoire of meals for your family without needing to run to the store before you cook each night.  If you’re like me (and I know you are ;) ), you’ll immediately recognize how many of your family’s own recipes fit the grocery list, which expands your possibilities even further.  I don’t know about you, but that’s exciting to me.  What has become a drudgery and a chore –  grocery shopping — will become streamlined, simple and quick.  Happy, happy mama!

There you have it! This method works well for burritos, enchiladas and chimichangas. This is an enchilada from The Stocked Kitchen. Now, all it needs is a half dozen more and the sauce and cheese. You'll love their recipe! This is the point at which I would take advantage of a simple freezer-cooking technique. You could easily make and roll these in bulk, flash freeze them and then store in gallon Zip-loc bags in the freezer. Pull out the number you need when a "quick fix" dinner or lunch is in order. Put them in the pan with sauce and cheese and bake. All the prep work being done ahead of time makes this a cinch to prepare and the oooohs and aaahs over how good they taste will make you feel like a master chef in your own kitchen!

I also believe there are many recipes in the Stocked Kitchen that would lend themselves well to freezer cooking, another of my favorite time and money savers.  The Stocked Kitchen has recipes for main dishes and soups, pasta dishes, appetizers, desserts, pizzas, breakfasts and brunches, salads, breads, beans, potatoes, rice and veggies!  Plus, you’ll learn to make your own sauces, salsas, dressings and condiments from ingredients on the list, saving money and space in the fridge.  What’s left?  What’s not to love?  It’s pure genius!

This Cucumber Dressing is another recipe I tried. (See all the yummy minced cucumber and dill flecks? Mmmmm!) It took about 3 minutes to whip up, using ingredients right out of my kitchen. Fabulous! It was great on salad and we are going to try it as a veggie dip and a spread on wraps, as well.

You’ve read a lot of my reviews, so you know I take pretty seriously what I recommend.  It’s one thing to be able to like and recommend a product.  It’s another to say you need it.  We have a pretty clear understanding of the difference between wants and needs in our house.  So, understand I am not speaking lightly when I say, “You NEED this book.”  I seriously believe it will save you time and money, help your family to eat healthier and take the panic out of mealtime preparation.  You will do your job more efficiently, effectively and happily because you have the tools you need to pull it off.  I will be giving this book as a wedding or bridal shower gift each time I receive an invitation.  If it were the only cookbook a new bride owned, she’d be set.  Seriously!  Yes, it’s a cookbook, but it’s also a tool, it’s a plan for being successful in the kitchen.  It equips you to masterfully prepare tasty meals, from ingredients you already have in your kitchen and enjoy doing it.  I wish I had had it years ago.  You’re going to love it!

Here’s one recipe, I’ve been given permission to reprint for you.  You need to put a batch of this in the oven every time you are going to have company, because your house smells AMAZING while it is baking!

Cinnamon Chips (from "The Stocked Kitchen")

Cook Time: 40 minutes

These are DELISH! I had trouble not just eating them, instead of saving them for recipes. They are part of a recipe for Cinnamon Chip Scones, in "The Stocked Kitchen", but I can't wait to add them to a batch of Snickerdoodle Cookies! Yum! Oooh! and biscuits! lol

Ingredients

  • 3 Tablespoons sugar
  • 1 Tablespoon cinnamon
  • 2 teaspoons unsalted butter
  • 2 teaspoons honey

Instructions

  1. Preheat the oven to 250 degrees. (In my oven, this worked better at 275 degrees)
  2. Cover a jellyroll pan (cookie sheet with sides) with aluminum foil.
  3. In a bowl, combine all ingredients with a fork until crumbly and evenly blended.
  4. Spread onto the jelly roll pan.
  5. Bake for 30 - 40 minutes, until melted and bubbly.
  6. Cool completely on the pan.
  7. Break into small pieces.

Laundry, It’s an Ugly Business, But Someone’s Got to Do It: Arm & Hammer Power Gel with OxiClean Review @bhg

I’m not gonna lie.  I am probably one of the most spoiled blessed women I know.  I have lived in homes where the laundry room was too tiny to do more than turn around in there with a basket, to ones where there was no laundry room, at all.  (Picture, a five-gallon diaper pail filled with bleach water and dirty cloth diapers, on the way to the laundromat.  It was the best, most rational reason I know, for switching to disposables!  :)   )  So, I have certainly been at the other end of the spectrum and no one is more painfully aware of just how amazing my current laundry room is.  It’s HUGE!

I took three pictures to try and round out your view of how great it really is. This is, of course, the bath area and the built-in cubby for the washer and dryer with 4 cupboards above.

There’s not only room for my washer and dryer, but a five-foot folding table and a shelf with hang bar, for hanging clothes above it.  There’s a beautiful, large and extraordinarily deep wash basin sink, as well as a shower and toilet.  It gets natural light and fresh air from the window and when it’s too hot for the window to be opened, this beautiful laundry room is air conditioned!  I also have tons of beautiful cabinetry and storage space in there.

I love that deep sink and when hubby installed the shelf and hang bar, the room was complete. My wheeled hampers tuck in perfectly under the folding table. Yup, I'm definitely a very lucky woman.

Ya know what?  I still HATE laundry.  –  lol  –  Don’t get me wrong, I understand how blessed I am to have people in my life who happen to get lots and lots of clothes dirty and how blessed we are to have the clothes we need.  I get it, and appreciate that, but on a scale of 1 to 10, laundry is still probably at about a negative 11 on my list of favorite household chores.  They can’t all be #1, right?  I think part of the reason I dislike it so much is I am someone who likes to do a job or project all the way through without stopping.  If I start it, I want to get it done and see the results.  Laundry has stages — the sorting, the washing, the drying, the folding and hanging, and then finally the putting away.  And frankly, by the time the final stage is reached, my many “blessings” can produce a whole new pile of laundry I need to get started on. As you can imagine, then, I’m no shrinking violet when it comes to asserting which products and procedures work for me, in this job.  I’m picky and I tell it like it is.  I’m not going to use anything that takes longer, costs more or is inefficient, causing me to have to re-do any part of the process.  So, I’m excited that my Switch and Save Challenge for the next four weeks is Arm and Hammer Power Gel with OxiClean.

This is actually a very good day. :) Hardly any visible mud and muck on his legs and arms. He is often covered, head to toe and on Saturday, the slime was more of a cow dung nature. Yuck! I send him off each morning in waterproof windpants and long sleeves. As the dew on the fields dries and his mud-caked, sweat-drenched and grass-stained clothes become heavy and unnecessary in the heat of the day, he peels them off to reveal this outfit underneath. Those "crusty" clothes, along with mud-caked tennis shoes, are what comes home, stuffed in a bag, for mom each afternoon. That's when I need to work my magic, so he can take off and do it all over, again, the next day.

There are always kitchen gadgets and gizmos that I think would be SO cool to have, but at the moment, there are a couple of basics that I am interested in adding to my kitchen tool arsenal.  I have no idea where to start as far as brands, features, etc.  So, any help that you all can offer would be truly, truly appreciated.

  1. kitchen scaleI would really like to have a good digital kitchen scale for baking.  There are some recipes where measuring by weight is so much more accurate than volume.  Don’t believe me?  Measure one cup of flour, then have your neighbor measure one cup of flour.  Now, weigh each cup on a kitchen scale.  The fluctuation can be profound!  It’s because some people are “scoop” measurers (which packs the flour into your cup) and others are “sprinkle and level” measurers (the cooking school “correct” method, by the way, for accuracy in most recipes).  The variance in these methods can be critical in some recipes, especially if you don’t know the kind of measurer the author was.  Weighing out flour in grams, insures you get the same amount every time and the same result from your favorite recipes.  It would have to be  large capacity and have a good tare function and consistent accuracy.  Yup, I really do need a good kitchen scale.
  2. food processorI’ve been a hold out on buying a food processor for years, and until recently, didn’t feel the need for one.  I have an amazing blender attachment for my Bosch that I have used with good success.  750 watts of raw power has been more than adequate for anything I’ve done, to date.  However, I am finding that some of the recipes I have tried lately, just don’t work as well in the quantities I want to make and that the shape of the blender pitcher is not as handy or efficient as the bowl of a food processor would be.  Two things a food processor would have to have are: 1) a large capacity and 2) power.  I need plenty of space for larger recipes and I don’t want to worry about burning up the motor if I’m working on a stiffer product.

So, which brands do you use?  Do you love it?  Hate it?  What would you recommend?  I really need your input on this one.  Maybe I’ll find some to review.  Thanks so much for all your help!  You guys are awesome!!

I think it’s time to end the abuse of sweet potatoes. No more turned up noses or scrunchy faces, no tongues sticking out to mock and reject them. The sweet potato is an oft underused and maligned vegetable, relegated to side dishes at holiday meals and camouflaged with gooey, browned marshmallows. Sweet potatoes are healthy, high in both Vitamins A & C and loaded with dietary fiber. They’re a natural source of beta carotene and antioxidants. Plus, they’re just plain delicious! I love them baked, topped with lots of butter. It is only in recent years that the unexplored potential of this yummy veggie has inspired the masses to give it a second look. You can certainly purchase them canned or frozen, and fresh sweet potatoes are common fare in most produce departments, now. The new form that is inspiring former naysayers to take a fresh look at the fleshy orange tubers, however, is the ingenious sweet potato fry. As you know, fry it in America, and they will come. If you haven’t tried sweet potato fries, you should. They combine all the health benefits with a pleasing and familiar form kids and adults, alike, will love. Finally, sweet potatoes will get the respect they deserve and you’re going to get a brand new, tasty treat — plus recipes for two fabulous dipping sauces I created this week. :)

Ore-Ida makes having sweet potato fries at home super simple. You can buy them frozen in your grocer’s freezer case, which is exactly what I did this week, when I received the opportunity to try them out AND create a couple dipping sauce recipes. Sam’s Club is the perfect spot for me to stock up on Ore-Ida Sweet Potato Fries. They’re available there in a whopping 4 lb bag, so I can always keep some on hand for a quick snack or to round out a quick pick-up meal.

I made a run to Lincoln, on Sunday with my list in hand. I was going to Sam’s to get Ore-Ida Sweet Potato Fries, but I needed a few other items, too — cream cheese (for the dipping sauces), smoked gouda (It’s the only place I can find my favorite cheese, at an affordable price, so I always treat myself when I stop by Sam’s Club) hmmm… I wonder if I can dip sweet potato fries in smoked gouda? lol – oh! and I need hamburger to make homemade jerky. I can always find great deals on meat at Sam’s Club.

As I entered the parking lot, I realized I was definitely going to need to fill up my gas tank, before leaving. The Sam’s Club Member Price for gasoline was 30¢/ gallon less than I had paid at home the week before. Woohoo! I love saving money!

I noted, once again, as I pulled my Sam’s Club Card from my purse, that it is definitely time to get the picture changed on my card. (You’ll see what I mean if you visit my Sweet Potato Fries ThisMoment video/slideshow, where I am able to have many more pictures of this shopping and recipe creating experience.) It’s only been about a bazillion years, since that original picture was taken and I have changed slightly, since then. Actually, it’s a little unsettling that I looked like that AND no one even questions me when I flash the “badge” at the door, but today, I’m in a hurry. There are sauces to make and fries to eat. No time for pictures. (That’s what I always say.)

I grabbed a cart and hustled straight back to the freezers, walked directly to everything Ore-Ida and scanned the shelves for…seriously? No sweet potato fries? But, I called ahead! Don’t tell me the news leaked out and there was a mad dash to scoop up all the sweet potato fries for some previously unknown sweet potato festival or something! Hhhhmmmppphhhhhh! Ok! Just calm down. Look again — Tater-Tots, Crinkle Cut Fries, Restaurant Style Fries, Hash Brown Potatoes, aaaaaaagggggghhhh! No sweet potato fries! Seriously, calm down. Walk around the freezer case to the other side, make the loop and come back to check one more time or… “Excuse me, kind stocker person. Where would I find Ore-Ida Sweet Potato Fries?” “They’re a special feature in the end cap on this row.” (I’ve always found Sam’s Club employees to be helpful and courteous.) The storm clouds lift and all is right with the world. I wheel around to the end cap where specially featured items are displayed. Of course they would be specially featured. It makes perfect sense. Enter music from heaven and spotlight from above. There they are — Ore-Ida Sweet Potato Fries. I lifted a bag into my cart and headed off to complete my Sam’s Club shopping list.

That’s everything. I make it through the checkout (No one even questions the picture of the stranger on my club card) and wheel my groceries to the van. A quick fill of the gas tank and I’m back on I-80, headed home and dreaming up dipping sauce for sweet potato fries. I know I want two — one savory and one sweet, but I still haven’t hammered out all the details, yet. Sometimes, the best parts of a recipe develop while your hands are “in the mix”, so to speak. That’s exactly what happened with these two yummy sauces. We absolutely loved them and will make them both, again. I’m going to share both recipes below, but to keep this post from being forty-two thousand, six hundred and thirty two feet long, I will only post a few pictures. Creamy Cinnamon Dip

Creamy Cinnamon Dip

Super, simple! Creamy, cinnamony deliciousness! It was fantastic with sweet potato fries and as a fresh fruit dip. I think it would be amazing on waffles or toasted English muffins, too.

Ingredients

  • 1 (8 oz) block cream cheese, softened
  • 1/4 cup butter, softened
  • 1 cup sour cream
  • 1 cup brown sugar, packed
  • 1 Tablespoon King Arthur Flour Vietnamese Cinnamon
  • chopped pecans for garnish, optional

Instructions

  1. Place all ingredients except pecans, in the bowl of your mixer and blend until smooth and creamy.
  2. Transfer to a serving dish, garnish with chopped pecans, if desired, and enjoy!

As a kid, I remember my mom, after Christmas, painstakingly sorting through the Christmas cards we had received, saving the pictures for scrapbooks and albums and then recycling the cards.  That was long before recycling was even a word and it wasn’t socially conscious, it was just common sense.  Mom would carefully cut the beautiful scenes, shapes and designs from cards to be used as gift tags on next year’s Christmas packages.  With a small hole poked in the top to string a piece of ribbon through, each trimmed card became a wonderfully unique and special tag to put on a loved one’s gift. The blank card-backs were saved for we kids to draw on or use in craft projects.  I also remember a few of the prettiest cards being decoupaged onto a carefully sanded piece of scrap wood from Dad’s shop and given as gifts.  The love and memories from all those cards lived on, not stuffed in a box somewhere, but shared with others from year-to-year.  It was totally DIY, when DIY wasn’t trendy, it was just the way we lived.  :)
