There’s A SHELF in the Front Hall Closet??!!??

Houston, we have a problem.  :)   I love our new home and am so happy to be settled, but like most houses it has a few little quirks.  The depths of the deep, dark abyss that is our front hall closet is one of them.  It’s actually quite lovely, if you could see it.  An expedition with a flashlight will reveal two full-width upper shelves above an ample coat bar and to the right, four more shelves built into the side-wall.  It really is fairly spacious and abounds with storage space, if we could only see it.  But alas, as with many homes of its generation, the builder did not think to install a light.  The closet is near the front door, but situated at an angle where no natural light is received for the wonderful two-and-a half-foot deep storage shelves along the side wall. That means that some of us are not aware that we could be storing things on the closet shelves and SOME of us can’t find the things we already tossed into that place where all lost mittens and mismatched shoes go to retire.

Imagine my delight when I received an opportunity through Mom Spark Media, to review a Mr. Beams Anywhere Ceiling Light.  It is completely wireless, running on four C batteries.  It emits a brilliant, white LED light that is motion activated.  I love that!  It pops on the minute I open the closet door and shuts itself off after 30 seconds with no movement.  That’s better than a light switch!  It also has a photocell that prevents the light from turning on if there is sufficient daylight without it, so it is designed to really protect your batteries.  Never having to replace the lightbulb is another amazing feature.  The light even came with it’s own mounting plate and screws.  It was an easy install and if I was willing to give it up (I definitely am not!), it would be easy to take down and move into some of the other ill-lit spots in our home.  Best of all, I can’t believe how much light comes from that small fixture!  I’m so pleased.

Nutella Cream Puff Squares: Let the Dessert War Begin!

Two creative, baking geniuses had the bright idea to create a blog around dessert and a challenge. Hello!!??!! I love them. I need to know these women. We may actually be sisters in some parallel dimension. Reeni from Cinnamon Spice & Everything Nice and Christine of The Cupcake Bandits had an idea for their own twist on a baking contest. They call it Dessert Wars. It’s progressive, from month to month, and each month is a brand new challenge. There is one winner and one runner-up each month leading up to December. The winners of the monthly challenges receive great prize packages (see the January Prize Package and fantastic sponsors at the bottom of this post.) with items donated from some of the finest companies the Internet has to offer! From then on, they can participate in all the challenges, but cannot be another monthly winner. They and the runners-up will have secured a spot in the ultimate dessert showdown, which will be the dessert competition extraordinaire, held in December 2011! Dessert Wars is definitely my idea of fun!

My newest taste-delight discovery. Yum!

The January Challenge is to create any kind of dessert using Nutella, making sure it is the “star” of your dish. I am, apparently, one of the few people left on planet, Earth, who has never purchased, tasted or dreamed about Nutella. I corrected that lapse in judgement on Tuesday and YUM! You’re going to be soooooo happy that I did.

Originally, I was conjuring up pictures of something like an eclair with Nutella in the filling and the icing. I started researching recipes and ran across some intriguing examples of something called Eclair Cake. I have never made eclairs, but I DO know they are pastry, so I immediately rejected the dozens upon dozens of recipes with graham cracker crusts. I finally decided I was going to put my twist on a recipe I found at Food.com, Eclair Cake by OR Nurse. In my opinion, this crust tastes much more like a cream puff than an eclair, which helped me settle on a name for my new Nutella version, Nutella Cream Puff Squares.

Nutella Cream Puff Squares

Yield: 12-16 servings

Crust Ingredients:

  • 1 cup of water
  • 1/2 cup of butter (one stick)
  • 1 cup flour
  • 1 teaspoon vanilla
  • 4 eggs

Filling Ingredients:

  • (2) 3.25 oz boxes instant vanilla pudding mix
  • 8 oz. softened cream cheese
  • 3 cups milk
  • (1½) 12 oz tubs of frozen whipped topping (Cool Whip)
  • (1) 13 oz jar Nutella

Topping Ingredients:

  • 1/2 cup Nutella
  • 2 Tablespoons butter
  • 2 teaspoons milk

. Directions:

  1. Boil the water and butter, until the butter is completely melted.

  2. Place 1 cup of flour in a mixing bowl.

  3. Slowly mix the melted butter and water into the flour.

  4. With the electric mixer running, add the eggs to the dough, one at a time. Be sure each is thoroughly mixed in before adding the next.

    Start mixer first, then add eggs one at a time. Remember that flour mixture is still hot. Keep it moving so you don't cook the eggs.

  5. Mix in the vanilla.
  6. Pour the cream puff batter into a greased, 9×13 pan and bake for 25 minutes at 400°.

  7. The pastry crust will be puffy and irregular. As a matter of fact, it will most likely resemble a golden brown surface of the moon. (Note to self: This could work for our next lunar science project or a topographical map.) Cool in the pan on a wire rack.

  8. Spread one 13 oz. jar of Nutella over the entire surface of the cooled crust.

    Cover the cooled crust with a layer of Nutella (one 13 oz. jar).

  9. Whip the cream cheese until it is creamy and soft, then add the milk SLOWLY, making sure it whisks in as you go. I discovered that if your milk is room temperature, it blends with the cream cheese easier.

  10. Add both boxes of vanilla pudding mix. Pudding will thicken as you mix. Be sure to scrape the sides of the bowl, as you go and get cream cheese and pudding completely incorporated.

  11. Spread thickened vanilla pudding over the Nutella layer.

  12. Add a layer of Cool Whip over the pudding. Even after making this twice in 48 hours, I managed not to get a picture of this step, either time. I guess my subconscious mind was telling me you could totally handle spreading Cool Whip over the pudding layer, without a picture. Normally, I am a store brand kinda girl, when it will save me a few cents, but in this instance I can say that my first batch was made with Cool Whip, the second with a store brand topping. Cool Whip was FAR superior in the way it set up in this dessert. The store brand tasted fine, but was too “soupy” to look pretty. Texture was everything when making this dessert look as good as it tastes. — I used 1½ tubs of Cool Whip to get a nice layer over the pudding.
  13. In a double boiler, or in my case, a bowl over a pan of boiling water, melt 1/2 cup of Nutella with 2 Tablespoons of butter, whisking them together as they melt. There is a learning curve to doing this, as I learned that Nutella can seize up just like chocolate, if you heat it too long, so keep an eye on it and take it off the heat as soon as you see it is melted. Even if it does thicken up on you, the two teaspoons of milk you are adding next will thin it back down. Whisk in the milk and then drizzle the melted Nutella over the whipped cream layer.

Refrigerate at least one hour before serving.

Cut generous servings of this creamy, chocolatey, hazelnut magnificence and eat one as fast as you can. Then call everyone in for a taste of their own. This would be a good time to ask for favors and/or gifts, while you have them under your amazing power! Really! It's that good!

Progresso Soup and a SOUPer New You! Review & Giveaway

I don’t buy many canned soups.  I’m more of a scratch-cooking kind of girl, but I do keep some on hand for those hectic nights when I need something warm and quick for a family supper.  When our kids were small, the skinny noodles with an occasional cube of “chicken” would cut it, but my hearty-eaters definitely need something a little more substantial, nowadays.  Progresso soups have chunks of vegetables and meat, they’re well seasoned and they taste good.  They are a better option for our family, at this stage of life.

I recently received the opportunity to review some Progresso Soup flavors that we hadn’t tried before.  I had no idea that they actually sell 40 different varieties, so it was a treat to try them.  The soups I received were “light”, meaning they had fewer than 100 calories per serving.  They are being promoted as part of Progresso’s Souper You™ Debut” contest!  From January 3rd through March 16th, you can visit Progresso on Facebook to enter for the chance to win a full makeover in New York City.  I could definitely use that kind of pampering and an all new look.

The soup flavors we tried were: Light Chicken Noodle, Light New England Clam Chowder, Light Vegetable Noodle, Light Santa Fe Chicken and Light Beef Pot Roast.  My husband is the only person in our household that eats Clam Chowder and it MUST be the New England variety.  He is picky about his chowder and he gave this one two-thumbs up, so I was very impressed.  He told me that being light, it was not as thick as the clam chowder he is used to, but the flavor was spot on.  The other  flavors were polished off in no time, for lunches, over a few days when I wasn’t feeling well and not doing much cooking.  There’s no question these soups aren’t homemade, but there is also no question that  Progresso soups far exceed the average canned soup fare.  We were well-satisfied.

The Skin MD Natural Shielding Lotion we reviewed.

Before the holidays, I was approached to review Skin MD Natural Shielding Lotion.  After visiting their website and reading about the product, I gladly accepted the opportunity.  My husband has suffered with eczema on the knuckles of his hands for the last several years.  They often get to the point of cracking and bleeding.  The patchy, scaly skin is itchy and can make him so miserable, at times.  After seeing the pictures and testimonials at the Skin MD website, I was anxious for him to try the Shielding Lotion.

I never even got a chance to take a “before” picture of his hands.  When the package arrived, he was so anxious, he opened and tried it before I was aware we had received it.  He started experiencing relief from the itching with the first application and within a day, his knuckles were less inflamed.  After using it for several weeks, now, he is a die-hard fan.  His eczema has not gone away completely, but it is barely noticeable, only one small patch on one knuckle, and he has not experienced any of the discomfort or severe dryness and cracking that was a part of his every-day life, before.

I’m neither a doctor, nor a scientist, but I do know when something works.  The explanation of just how is thoroughly detailed on the Skin MD website.  Their explanation of what our modern environment does to our skin is magnified in my mind when I think of the machinery and stresses my husband’s hands are exposed to in his work.  He has remarked several times that Skin MD was not greasy, but that it seems to form some sort of barrier over his hands, protecting them from the damage of the elements.  This makes sense with the website’s explanation of how Skin MD Shielding lotion actually bonds with the skin to increase the skins ability to form a protective layer, which we are constantly stripping away with soaps and cleansers.  However it works, Skin MD Shielding Lotion is exactly what we’ve been looking for to relieve the discomforts of my husband’s eczema.  We realize it can’t be “cured”, however we are content with the comfort and relief of symptoms that no other product has provided.  We can highly recommend this product for others seeking that same relief.  So, whether you have a more serious skin condition or just need to rescue your skin from the dry winter air, check out their website and see the benefits for you and your family.

A Flock of “Woolly” Pops: My Wilton Pops in a Post Contest Entry

In two previous posts, I shared my excitement at some incredible Wilton baking supplies I received and my first attempt at making cake pops , in which I created adorable princesses, tigers and lions .  I used many of those supplies again, today, to create some cake pops for the Wilton Pops in a Post contest.  I love the Wilton Chocolate Pro Melting Pot.  Not only does it melt chocolate and candy melts without scorching, it has a warmer that keeps the candy melted and perfect as you work on longer projects.  I definitely put it to good use, today.

To begin making cake pops, I used a yellow cake mix, a box of instant butterscotch pudding, 4 eggs, 1 cup of water and 1/3 cup of vegetable oil.  I mixed them all together, poured the batter into a greased 9×13 cake pan and baked it in a 350° oven for 35 minutes.

Once the cake cooled, I crumbled the entire cake into a large bowl.

I mixed an 8 0z block of cream cheese, 1 stick of butter, 1 teaspoon vanilla, 1/4 cup of milk and enough powdered sugar (around 2 lbs.) to make a creamy icing.

I measured 1 cup of the icing and mixed it into the cake crumbs.

Add 1 cup frosting to cake crumbs.

Once the crumbs and icing were thoroughly mixed, I shaped the resulting “dough” into 36 balls about the size of walnuts.  I chilled the spheres overnight.

The next day, I melted white Wilton Candy Melts and dipped the ends of pop sticks into the candy.

Then I inserted the prepared sticks into the rolled cake and icing balls.  At this point, I refrigerated the pops again, in order to decide what form my cake pops were going to take.  I knew that I would need a unique and original design to enter into the Wilton Pops in a Post contest.

One of our daughters will be married, in April, and so I first decided to play around with some flower ideas.  I made two.  One of them was so embarrassing, I can’t bring myself to show it to you.  The second, a daisy, turned out okay, but wasn’t really contest-worthy.  I used fondant to make the petals and a half-cakeball for the center.  I affixed the pop stick to the back of the daisy with fondant and candy melt, but in reality the pop was too heavy for that.  The stick would have done better, inserted directly into the cake.

After having spent quite a bit of time on the first two flowers, I decided to take a break and just make something cute from Wilton’s “Pops: Sweets on a Stick” book.  This cute little chick was quick and easy and re-motivated me to try and come up with something for the contest.

I finally came up with an idea that I hoped would work; and so I started snipping miniature marshmallows into quarters.

I dipped the edge of each marshmallow quarter into white Wilton Candy Melts and then “glued” them to a cake pop.

I applied the quartered marshmallows, until the entire cake pop surface was covered.

Once all the marshmallow bits were secured to the cake pop, I dipped the entire pop into the white Wilton Candy Melts.

I placed the dipped pop into a block of floral foam to set up, while I started forming a sheep head from white Wilton Fondant.  I rolled a ball and then shaped the head, adding flattened tear-drop ears.  I broke a toothpick in half, dipped it into the candy melts and inserted it into the back of the sculpted sheep head.  (Be sure to remove that toothpick before eating. )  I poked a hole into the sheep body with another toothpick, at the place where I wanted to attach the head.  Then I applied a small amount of candy melt to the back of the sheep head and “glued it to the body, inserting the toothpick into the hole I had made.

I also “glued” whole miniature marshmallows over the entire surface of another cake pop, and dipped it in white Wilton Candy Melts that I had tinted green with gel food coloring.  With the addition of some pink candy flower sprinkles, it became a shrub.  In total, I made four sheep; three with white faces, one with brown.

Once the heads were applied to the sheep bodies, I carefully dipped the heads into either Wilton white candy melts or Wilton melting chocolate, to give them the smooth finish I wanted.  I used tiny purple candy sprinkles from Wilton, for the sheep eyes, affixing them with a tiny dot of white candy melt.

I’m not giving up on creating some flower cake pops in the future, but for tonight, I am pleased to have these butterscotch, marshmallow sheep cake pops to enter in the contest.

These would be so much fun at a kid’s birthday party or even at an Easter celebration.  I love the way the marshmallows created the “woolly” coats on my yummy Cake Pop Sheep.  So, now we wait for Wilton to select their 10 favorite pop creations.  If I am fortunate enough to be counted in that number, I will be asking for your votes in the final.

Lions and Tigers and … Princesses: My First Attempt at Making Cake Pops

For New Year’s Eve, I decided to try to throw some Cake Pops together, at the last minute, for the kids who would be celebrating with us.  “At the last minute” is so NOT the way you want to start making cake pops.   :)     But, start I did; and with the help of Wilton’s Silicone Brownie Pops pan, some Wilton Candy Melts and colored sugar, plus the cute Wilton Pops Fun Pix that were included in my kit, I managed to get in some practice and create some yummy fun for our younger guests.

I decorated some pretty in pink princesses by dipping the brownie pops in White Wilton Candy Melts that I had tinted pink with some Wilton gel food coloring.  I sprinkled the dipped pop in pink sugar crystals and added a Princess Pops Fun Pix to the top of each pop.  Isn’t it cute how the pops form their skirt?

I also made some jungle animals.  The tigers were first dipped in chocolate and then I piped some white Wilton Candy melts tinted with orange gel food coloring over the chocolate.   I used a toothpick to swirl the chocolate and orange candy.  Then I added a Tiger Pops Fun Pix to the top.  While the candy set up, I tinted some white candy melts with green gel food color and then “painted” it onto the inside of a slightly flattened cupcake paper, with a fork.  Once the candy hardened, I peeled the cupcake paper away from the candy.  This was NOT easy.  They ended up breaking into several chunks each time I tried, but that turned out to be okay.  I used the rest of the green tinted candy melts to “glue the pieces on the bottom of my tigers (and the lions).  I had to hold each pop upside down long enough for the candy “glue” to start to set, then I put the pop in the stand to let it finish hardening.

Another one of the tiger pops. The pattern for the "stripes" is different for each depending on how the two colors were swirled together.

Lions were very simple to make — a quick dip in the chocolate and then I inserted the Lion Pops Fun Pix in the top.  Once the chocolate was set, I added grass to the bottom of the lions, using the same method I described above, for the tigers.

I also made some very simple pops, dipped in candy melts and/or chocolate and then added some candy sprinkles.
